Carrot is root vegetable.The carrot is a biennial plant in the umbellifer family, Apieceae. scientific name is duacus carota.They grow under the ground, and have green shoots above the ground. carrots are crunchy,tasty and highly nutritious root vegetable.orange color is well known color of carrot.but carrot found in various colors like purple, yellow,red white. The variation in colours is caused by the pigments that are present in these carrots. It is use in salads and soups.bright color carrot has high carotene content.all parts of a carrot are edible like leaves,roots.Carrots are cool-season crops which can be planted in early Spring and left in the ground all summer for harvest in the fall. Carrots grow best in a well-draining, loose, sandy soil which is free of large rocks and has a pH between 5.5 and 7.0.
